I’m not usually one for specialty kitchen gadgets, but I have to admit I am obsessed with my Air Fryer. The name can be misleading—there’s no deep frying involved—just hot air circulating quickly to produce crisp, crunchy results. That makes it perfect for an irresistibly crispy, gooey grilled cheese. Once you try this method, you may never make a grilled cheese any other way.

How to make a grilled cheese sandwich in the Air Fryer?
To get the best results when making a grilled cheese in an Air Fryer, follow a couple of simple rules:
- Brush or spread a thin layer of a crisping agent (fat) on the outside of the bread. Mayonnaise is my favorite choice because it browns and crisps beautifully—you won’t taste any mayo once it’s cooked.
- Because an air fryer circulates air strongly, secure the sandwich so it doesn’t move. I use two toothpicks inserted through the sandwich, one on each side, but an air-fryer-safe trivet or small weight works as well.
With those tips in mind, choose your cheese (or combination of cheeses) and cook the sandwich at 380°F for about 8–10 minutes total, flipping once halfway through.

What cheese makes the best grilled cheese?
Cheese choice is highly subjective, so here’s a quick guide to how different cheeses behave when melted. Pick the one that matches the texture and flavor you want.
- American – Very melty and gooey with a salty profile; classic comfort.
- Cheddar – Good flavor, slightly stringy when melted; sharper cheddars taste more pronounced.
- Mozzarella – Mild flavor and very stringy, ideal for dramatic cheese pulls.
- Provolone – Mild, stretchy; smoked provolone adds more depth.
- Swiss – Tangy and very stringy; pairs well when combined with other cheeses.
- Gruyere – Rich and nutty, medium stretchiness; great mixed with sharper cheeses.
- Pepper Jack – Spicy and gooey rather than stringy; good for heat lovers.
- Brie – Mild to earthy; firm brie becomes gooey, very soft brie can get quite runny.
- Goat Cheese (Chevre) – Fresh, tangy, and creamy; not stringy.
- Havarti – Inconsistent melting across brands—some melt well, others turn oily. Use only if you know how your brand behaves when heated.

What are some good cheese combos for grilled cheese?
There’s debate about what strictly counts as a grilled cheese, but I prefer to be flexible—adding a few complementary ingredients can elevate the sandwich while the air fryer still produces the same crisp, melty result. Here are several combinations I enjoy:
- Classic American cheese on white or sandwich bread.
- Mozzarella + Cheddar for the best mix of stretch and flavor.
- Pesto + Mozzarella + Spinach + Tomato for a fresh, flavorful lunch.
- Swiss or Gruyere + Ham + a thin smear of mustard for a savory, tangy melt.
- Brie + fruit spread (blackberry is a favorite) + arugula for a sweet-and-salty twist.
- Goat cheese + thyme + honey for a creamy, aromatic bite.

What to serve with grilled cheese?
- Tomato soup — the classic, cozy pairing.
- Marinara sauce for dipping if you prefer a lighter saucy option.
- A fresh green salad to balance richness.
- French fries for a hearty comfort-food meal.

Air Fryer Grilled Cheese
A quick method for a crispy outside and perfectly melted interior—ideal for lunches or a simple dinner.
Course: Lunch
Cuisine: American
Keyword: Air Fryer
Prep Time: 5 minutes
Cook Time: 8 minutes (plus any extra minute if needed)
Total Time: 13 minutes
Servings: 1 person
Author: Marianne
Ingredients
- 2 slices Italian bread (or your favorite bread)
- 1 slice cheddar cheese
- 1 slice mozzarella cheese
- 1 tablespoon mayonnaise
Equipment
- Air Fryer
- Toothpicks (or an air-fryer-safe trivet to hold the sandwich)
Instructions
- Spread the mayonnaise on one side of each slice of bread. Layer the cheeses on the side that does NOT have mayonnaise, then top with the other slice so the mayonnaise is on the outside.
- Place the sandwich in the air fryer and secure it by inserting two toothpicks, one on each side, or place an air-fryer-safe trivet on top if available.
- Set the air fryer to 380°F. Cook for 4 minutes, then check the top. If it has started to brown, remove the toothpicks carefully, flip the sandwich, and cook another 4 minutes. If it hasn’t browned, cook 1 more minute before flipping and finishing with 5 additional minutes.
Notes
This recipe was tested in basket-style air fryers (a 3L Power XL and a 1.7L Dash). Avoid letting the cheese hang off the sides of the bread before cooking; it can melt and move around in the air fryer.
