Everyone loves pizza, and these Pizza Supremes by Matt Golinski for D’Orsogna Deli Fresh are a fantastic, fuss-free way to get kids eating a variety of ingredients. They’re quick to prepare, easy to customize, and ideal for lunches, snacks, or a simple family meal.
Make a large batch, bake them, then cool and freeze individually wrapped. Pop a frozen pizza supreme into a lunch box in the morning and it will be defrosted and ready to eat by lunchtime. These are especially handy for busy mornings and work well chilled or heated.
INGREDIENTS
- 100g D’Orsogna Deli Fresh Mild Salami
- 8 small pita breads
- 200g tomato paste (or pizza sauce)
- 200g sliced button mushrooms
- 100g pitted black olives (chopped if preferred)
- 200g shredded mozzarella
COOKING INSTRUCTIONS
- Preheat the oven to 200°C (390°F).
- Spread each pita bread evenly with tomato paste or pizza sauce.
- Top with slices of mild salami, mushrooms and black olives. If serving to young children, chop the mushrooms and olives into smaller pieces.
- Sprinkle shredded mozzarella over each pita so the toppings are held in place.
- Bake for about 10 minutes, or until the cheese is melted and golden and the edges of the pita are crisp.
Serving and variations
These mini pizzas are versatile. Add a handful of baby spinach or torn basil for freshness, swap the salami for another D’Orsogna deli variety, or include roasted capsicum for extra colour. For a lighter option use part-skim mozzarella. They’re great warm from the oven or cooled for lunchboxes.
How to pack for lunch
Allow pizzas to cool completely before packing. Slice in half if desired and wrap individually in cling wrap or place in airtight containers. These pizzas freeze exceptionally well—wrap each one separately, store frozen, and add frozen to a lunchbox; they should defrost by lunchtime. For heated lunches, reheat from frozen in a microwave or oven until warmed through.
I tried these for a weekend lunch and they were a hit. I chopped the mushrooms and olives smaller for my younger children and added a handful of baby spinach on top. The mild salami adds a pleasant, savoury flavour that pairs well with the simple tomato and cheese base.
