Instructions
- Combine the flour, baking powder and salt in a medium bowl.
- Add the water and 1 tablespoon vegetable oil. Whisk until smooth. The batter should be thick, similar to heavy cream, and able to coat a spoon. If it’s too thick add a teaspoon of water at a time; if too thin add a little more flour. Set aside.
- Heat vegetable oil in a small saucepan or deep pan to about 180°C (350°F). Do not overfill the pan—about one-third full is ideal. Cook in batches so the oil temperature remains steady.
- Dip each pineapple ring into the batter, coating it fully, then carefully place it into the hot oil. Fry until golden brown on both sides, turning once. This usually takes a minute or two per side depending on thickness.
- To check the oil temperature, drop a small pea-sized bit of batter into the oil—if it sizzles and rises immediately, the oil is hot enough.
- Remove fritters with a slotted spoon and drain on kitchen paper. While still warm, toss in sugar and shredded coconut if desired, or serve with syrup or ice cream.
