Zesty breakfast burritos don’t have to dirty every pan in the cupboard to be a reality! With a little bit of trickery you can have burritos ready to eat while only dirtying one pan!
I love breakfast burritos. There’s a small Mexican spot near my house that makes enormous, inexpensive burritos that taste fantastic. But buying them every morning adds up, so I developed an easy way to recreate that same satisfying breakfast at home without creating a sink full of dishes. This one-pan method gets potatoes, eggs, and meat all cooked together in a single skillet and yields plenty of filling for large burritos.
The approach is simple: cook your meat first, use the pan drippings to crisp the potatoes in the oven, then pour seasoned eggs over the potatoes and finish baking until the eggs are set. Finally, fold everything back together and assemble your burritos. This technique minimizes cleanup and frees you from standing at the stove monitoring multiple pans.
Start with the meat. Use whatever breakfast meat you prefer — sausage, chorizo, bacon, or diced ham all work well. Brown and crumble the meat in a large ovenproof skillet until fully cooked, then transfer it to a plate lined with paper towels to drain excess fat. If you’re using sausage, blotting on paper towels helps remove extra grease.

Leave about one to two tablespoons of the drippings in the skillet. If your meat was very lean and left little fat behind, add a tablespoon or two of neutral oil. Heat the skillet until the fat is hot, then add the potatoes. For convenience and extra flavor I like O’Brien-style frozen potatoes because they already contain onions and peppers, which boost the burrito filling without extra chopping.
Spread the potatoes in an even layer and let them cook for one minute without stirring to encourage browning. Sprinkle 1/2 teaspoon kosher salt over the potatoes, then transfer the skillet to a preheated 450°F oven. Bake the potatoes, uncovered, for 20–25 minutes or until they are tender and beginning to brown on the bottom.

While the potatoes bake, whisk the eggs and seasonings. I prefer to add a little water to scrambled eggs — about 1/2 cup for this recipe — because water keeps the eggs from browning quickly and helps create soft, tender curds. Combine the eggs with 4 ounces of drained diced green chiles and 1/2 teaspoon kosher salt. You can substitute milk if you prefer, but water produces a lighter texture and avoids milk solids that can darken during baking.

When the potatoes are cooked through and browned underneath, slide the oven rack out and pour the egg mixture evenly over the potatoes. Do not stir at this point. Return the skillet to the oven and bake for 10 minutes. This hands-off step lets the eggs set around the potatoes and creates a nice, even texture without overworking the eggs.

After 10 minutes, remove the skillet and gently stir the eggs and potatoes together to mix them evenly. Return the pan to the oven and bake an additional 3–8 minutes, depending on how firm you like your eggs. The total oven time should give you fully cooked, tender eggs without drying them out.
Once the eggs are cooked to your liking, take the skillet out and stir the cooked meat back into the mixture. The heat from the eggs and potatoes will warm the meat through. At this point the filling is ready to spoon into warm tortillas.

Finish your burritos with shredded cheese, salsa, avocado, hot sauce, or any other toppings you enjoy. Warm the tortillas so they fold easily, then spoon a generous portion of the one-pan filling into each tortilla and roll them up for a hearty breakfast that feeds a crowd with minimal mess.

Ingredients
- 1 pound breakfast sausage
- 28 ounces frozen O’Brien potatoes (with onions and peppers)

- 8 eggs

Instructions

Transfer the skillet to the preheated oven and bake, uncovered, for 20–25 minutes or until the potatoes are tender and slightly browned underneath.
- While the potatoes bake, whisk together the eggs, drained diced green chiles, ½ teaspoon kosher salt, and ½ cup water until well combined. The water keeps the eggs tender and prevents excessive browning.
- When the potatoes are done, carefully slide the oven rack out and pour the egg mixture evenly over the potatoes in the hot skillet. Do not stir; return the skillet to the oven and bake for 10 minutes to allow the eggs to set around the potatoes.
- Remove the skillet and gently stir the eggs and potatoes to combine. Return to the oven and bake an additional 3–8 minutes, depending on how firm you like your eggs, until they reach your desired doneness. Remove from the oven.
- Fold the cooked sausage back into the egg-and-potato mixture and stir until the meat is heated through and evenly distributed.
- Scoop the filling into warmed tortillas, top with shredded cheese and salsa or any preferred toppings, and serve immediately. These burritos are hearty, portable, and perfect for feeding a family or prepping for the week.
