Ingredients (Serves 6)

Instructions
- Combine the gluten-free breadcrumbs and milk in a small bowl. Let them soak for 5–10 minutes until the crumbs are soft.
- In a mixing bowl, add the soaked breadcrumbs to the ground beef and pork along with the egg and herb-and-garlic seasoning. Mix gently with your hands until evenly combined.
- Shape the mixture into 14–16 equal meatballs and place them in the slow cooker. Arrange in a single layer if possible.
- Whisk the tapioca flour with an equal amount of water to form a smooth slurry. Stir the slurry into the beef broth and add the tomato paste, whisking until fully combined.
- Pour the broth mixture over the meatballs, cover the slow cooker, and cook on High for 3–4 hours or on Low for 6–8 hours.
- When the meatballs are cooked, remove them to a serving dish and set aside.
- Add the dairy-free cream to the cooking liquid and whisk or blend until the sauce is smooth and slightly thickened. If the sauce looks separated, whisk vigorously or strain it for a finer texture.
- Return the meatballs to the sauce or serve them topped with the gravy.

Make-Ahead and Storage
- To freeze: Shape meatballs and place uncooked on a parchment-lined baking sheet in the freezer for 2 hours, then transfer to a freezer bag. Thaw completely before cooking.
- Leftovers: Cool completely, then store in airtight containers in the refrigerator for up to 3 days.
