Chipotle Roasted Chicken and Vegetable
This recipe combines oven-roasted bell peppers and corn with pre-cooked, oven-roasted chicken for a satisfying meal without the fuss. Using Philadelphia 1/3 less fat Cream Cheese to make the chipotle sauce keeps the dish creamy and flavorful while cutting calories compared with traditional heavy sauces. Naan bread serves as an easy, thin-crust alternative that crisps quickly under the broiler for the texture my family prefers.
I developed this pizza as an entrée idea for the Real Women of Philadelphia contest. While I didn’t enter myself, I love how easily this comes together and how adaptable it is. It’s an excellent option when you want a quick, homemade pizza that tastes special without a lot of work.
Why this works well for weeknights: using store-bought oven-roasted chicken and ready-to-use naan drastically cuts prep time. Roasting the vegetables concentrates their sweetness and adds a subtle char that plays beautifully with smoky chipotle. Skipping shredded cheese keeps the pizza lighter while letting the chipotle cream cheese sauce shine.
If you cook for someone picky about textures or flavors, here are a few practical tips that help get everyone to the table happily:
- Avoid launching into ingredient lists—describe the overall flavor instead, such as “smoky and slightly sweet.”
- Keep the presentation simple and familiar; arranging toppings in neat sections can be reassuring for selective eaters.
- Offer a small side or garnish they already enjoy so the meal feels less unfamiliar.
- Use confident, matter-of-fact language about what’s on the plate: “It’s all stuff you like.”
Chipotle Roasted Chicken and Vegetable Pizza
Serves 4–6
Ingredients:
- 1 yellow bell pepper
- 1 red bell pepper
- 1 green bell pepper
- 1½ cups corn (fresh or frozen)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 8 oz Philadelphia 1/3 less fat Cream Cheese, room temperature
- ¼ cup chipotle sauce plus 2 tablespoons reserved, divided use
- 4 pieces of naan bread
- 2 cups cubed oven-roasted chicken breast
- ¼ cup fresh cilantro, chopped
Instructions:
- Preheat oven to 425°F (220°C). Dice the yellow, red, and green bell peppers and spread them on a foil-lined baking sheet. Add the corn, drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.
- Roast the vegetables at 425°F for 20 minutes. For extra char and crispness, move the baking sheet under the broiler for 3–4 minutes at the end, watching closely so they don’t burn. Remove from oven and let cool slightly.
- While the vegetables roast, whisk the Philadelphia Cream Cheese with ¼ cup chipotle sauce in a bowl until smooth to make the chipotle cream cheese sauce.
- Place the naan bread on a baking sheet. Spread a generous layer of the chipotle cream cheese sauce over each piece of naan. Top with a layer of the roasted vegetables, then scatter the cubed chicken evenly over the vegetables. Sprinkle cilantro over the top.
- Drizzle the remaining 2 tablespoons of chipotle sauce over each assembled naan. Return to the oven for 5–7 minutes just to warm through and meld the flavors, or briefly broil to crisp the edges.
- Slice and serve hot. Leftovers can be refrigerated and reheated in a oven or toaster oven to retain crispness.
Serving suggestions: a simple green salad or a light slaw pairs nicely to keep the meal balanced. If you prefer more heat, add a few extra dashes of chipotle sauce or a sprinkle of red pepper flakes. For vegetarian variation, omit the chicken and add extra roasted vegetables or a can of drained black beans for protein.
This Chipotle Roasted Chicken and Vegetable Pizza offers a quick, balanced dinner option that doesn’t sacrifice flavor. It’s ideal for busy evenings when you want something homemade, satisfying, and dependable. The combination of smoky chipotle, sweet roasted peppers, and tender chicken makes it a repeat-worthy choice for family meals.
