Classic Gluten-Free Italian Meatballs Recipe

Gluten Free Meatballs (Slow Cooker, Dairy-Free)

These gluten free, dairy-free meatballs are effortless to prepare in a slow cooker with just five main ingredients and a few minutes of hands-on time. They develop great flavor cooking low and slow, and finishing the cooking liquid into a creamy gravy makes this an especially comforting meal. Serve with mashed potatoes or rice for a complete dinner.

Overview

I usually make a variety of meatball recipes, and I wanted a reliable gluten-free version for the slow cooker. Using gluten-free panko-style breadcrumbs gives the meatballs a familiar texture without the grainy taste that some alternatives can add. This recipe uses a simple herb-and-garlic seasoning blend, but you can adapt the spices to your taste. Dairy-free cream or milk can be used to finish the sauce so it remains lactose-free.

Ingredient Notes

  • I used a mix of ground pork and ground beef for a richer flavor; you can use only beef or only pork if you prefer.
  • Gluten-free panko-style breadcrumbs work well because they soak up liquid and provide a soft interior.
  • Use regular milk or a dairy-free alternative such as almond or cashew milk to soak the breadcrumbs.
  • The seasoning in the recipe is an herb-and-garlic blend, but any savory blend or simple salt and pepper will also work.
  • Dairy-free cream is optional for finishing the sauce; omit it to keep the sauce lighter or if you don’t have a dairy-free option on hand.

Preparation Notes

  • Allow the breadcrumbs 5–10 minutes to fully absorb the milk before mixing with the meat.
  • Mix the meat gently with your hands—combine thoroughly but avoid overworking the mixture to prevent tough meatballs.
  • Form evenly sized meatballs so they cook uniformly; this recipe makes about 14–16 meatballs depending on size.
  • The cooking liquid may look separated after cooking; remove the meatballs and whisk or blend the sauce until smooth. You can also strain the sauce if you want a finer gravy.

Equipment

  • A casserole-style slow cooker is ideal for arranging meatballs in a single layer, but a standard slow cooker works fine if you need to stack them.

Ingredients (Serves 6)

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/4 cup gluten-free panko bread crumbs
  • 1/4 cup dairy-free milk (or regular milk)
  • 1 egg
  • 2 teaspoons herb and garlic seasoning (or your preferred seasoning)
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons tapioca flour
  • 2 tablespoons dairy-free cream (optional)

Instructions

  1. Combine the gluten-free breadcrumbs and milk in a small bowl. Let them soak for 5–10 minutes until the crumbs are soft.
  2. In a mixing bowl, add the soaked breadcrumbs to the ground beef and pork along with the egg and herb-and-garlic seasoning. Mix gently with your hands until evenly combined.
  3. Shape the mixture into 14–16 equal meatballs and place them in the slow cooker. Arrange in a single layer if possible.
  4. Whisk the tapioca flour with an equal amount of water to form a smooth slurry. Stir the slurry into the beef broth and add the tomato paste, whisking until fully combined.
  5. Pour the broth mixture over the meatballs, cover the slow cooker, and cook on High for 3–4 hours or on Low for 6–8 hours.
  6. When the meatballs are cooked, remove them to a serving dish and set aside.
  7. Add the dairy-free cream to the cooking liquid and whisk or blend until the sauce is smooth and slightly thickened. If the sauce looks separated, whisk vigorously or strain it for a finer texture.
  8. Return the meatballs to the sauce or serve them topped with the gravy.

Make-Ahead and Storage

  • To freeze: Shape meatballs and place uncooked on a parchment-lined baking sheet in the freezer for 2 hours, then transfer to a freezer bag. Thaw completely before cooking.
  • Leftovers: Cool completely, then store in airtight containers in the refrigerator for up to 3 days.

Serving Suggestions

These meatballs pair perfectly with dairy-free mashed potatoes, steamed vegetables, or over pasta for a family-style dinner. The creamy, slightly tangy gravy complements starchy sides and helps keep the dish comforting and satisfying.

Notes

You can use regular milk or dairy-free milk (almond, cashew, etc.) for soaking the breadcrumbs. The dairy-free cream in the sauce is optional but adds richness. Adjust seasoning to taste and swap herbs as you like for a personalized flavor profile.
