They are coated in a crispy almond-flour and shredded-coconut breading and cooked in the air fryer, with oven instructions included. SHOULD I USE CHICKEN TENDERS OR BREASTS?

Chicken tenders are small strips of dark-white meat attached to the underside of the breast. They’re naturally tender and often sold separately. If you can’t find tenders, use boneless skinless chicken breasts and slice each breast lengthwise into strips about 1/2 inch thick so they cook quickly and evenly.

To make the recipe compliant with the Specific Carbohydrate Diet (SCD), omit the onion powder and garlic powder unless you are certain your brand is SCD-approved. Many powdered seasonings contain anti-caking or binding agents that are not allowed on SCD.

CAN I BAKE THESE IN THE OVEN?

If you don’t have an air fryer, bake them on a wire rack set over a baking sheet so air can circulate underneath. Spray the tenders well with cooking spray and bake at 400°F (200°C) for about 20 minutes, flipping and re-spraying halfway, until golden and cooked through.

WHAT ABOUT LEFTOVERS

Paleo Chicken Tenders — Recipe

Ingredients

  • 3/4 cup almond flour
  • 1/3 cup shredded unsweetened coconut
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder (optional)
  • 1/2 tsp onion powder (optional)
  • 1/2 tsp chili powder
  • 2 large eggs
  • 1 lb chicken breasts or 1 lb chicken tenders
  • Cooking spray

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a shallow bowl, combine the almond flour, shredded coconut, salt, pepper, paprika, garlic powder, onion powder, and chili powder.
  3. If using chicken breasts, slice each breast into 1/2-inch thick strips.
  4. Crack the eggs into a shallow bowl and whisk until combined.
  5. Dip each chicken strip into the egg, then dredge in the almond-coconut mixture, pressing lightly so the coating adheres. Place coated tenders in a single layer in the air fryer basket; you may need to cook in batches.
  6. Spray the tenders generously with cooking spray. Air fry at 400°F for 6 minutes, flip, spray again, and air fry for an additional 3 minutes, or until golden and cooked through. Internal temperature should reach 165°F (74°C).
  7. Remove and let rest briefly before serving. Repeat with remaining tenders.
