Breakfast Tacos for a Crowd

Ask any group—teens or adults—what they want for a meal and you’ll often hear “tacos!” Whether it’s morning, noon or night, tacos are a crowd-pleaser. These breakfast tacos go beyond scrambled eggs and bacon on a tortilla. They combine savory sausage, fluffy cheesy eggs, crispy hash browns and a tangy Avocado Chili Cream sauce that elevates the whole plate. This recipe is designed to feed a large group easily while keeping flavors bright and satisfying.

Breakfast Tacos

These tacos are highly customizable and simple to serve. Unlike burritos, they don’t require individual wrapping or complex assembly—perfect for buffet-style feeding. The trick is to prepare in batches: bake the eggs, roast the hash browns until crisp, brown the sausage, warm the tortillas, and serve with the Avocado Chili Cream sauce in squeeze bottles for an easy self-serve setup.

Why heat the tortillas?

Warming corn or flour tortillas matters. Heat releases the corn’s savory sweetness and lime brightness and makes the tortillas flexible and less likely to crack while eating. If you have griddle space, give each tortilla a quick 30-second toast before keeping them warm in the oven or a slow cooker.

Serving Suggestions & Notes

Set up a self-serve station in this order for smooth flow:

  • Plates
  • Tortilla shells (kept warm)
  • Crispy hash browns
  • Cheesy scrambled eggs
  • Cooked sausage
  • Avocado Chili Cream sauce in squeeze bottles (label them)
  • Utensils and napkins

These tacos are forgiving and adaptable: swap sausage for bacon or chorizo, add fresh cilantro, pico de gallo, or shredded lettuce. The make-ahead sauce and the ability to hold eggs and hash browns warm make this approach especially practical for feeding groups of 20–200 with consistent, delicious results.
