A good blender makes preparing smooth or partially blended soups quick and easy. If you prefer a completely smooth soup, blend it all; if you like a chunkier stew, skip the blending step and reduce the broth slightly.

The base of this soup is aromatic sautéed onion, garlic, celery and carrot, simmered with potatoes, tomatoes and chickpeas in vegetable broth. Garam masala and turmeric provide depth and warmth; a touch of ground ginger brightens the spice profile. Instructions
- In a large pot, heat the olive oil over medium-high heat. Add the chopped onion, minced garlic, celery and carrot. Sauté until the vegetables are softened and fragrant, about 5–7 minutes.
- Add the vegetable broth, peeled and cubed potatoes, diced tomatoes, chickpeas, garam masala, turmeric and ground ginger. Stir to combine.
- Bring the soup to a gentle boil, then reduce heat and simmer uncovered for about 30 minutes, stirring occasionally, until the potatoes are tender and flavors have melded.
- Remove the pot from heat. Season with salt and pepper to taste.
- For a creamier texture, carefully transfer about half the soup to a blender and purée until smooth, then return it to the pot and stir. (Alternatively, purée the entire batch for a velvety soup, or skip blending entirely for a chunky stew.)
- Garnish bowls with fresh cilantro and serve warm with bread, rice or a light salad.
Notes
- To make a stew-like version, use less broth (try 1–2 cups) and serve over brown rice or grains.
- Vegetable swaps: sweet potatoes, squash or bell peppers all work well if you prefer different textures or seasonal produce.
- Adjust spices to your taste—add a pinch of cayenne for heat, or a squeeze of lemon juice at the end for brightness.
- If you plan to puree soup for baby food, reserve an unseasoned portion or use milder amounts of salt and spices for small children.
