This dairy-free muffin recipe is one I’ve wanted to share for a long time. I love basic recipes because they give you a flexible foundation for flavors and additions. Use vanilla or other extracts, fold in berries, nuts, sugar-free chocolate chips, cocoa powder, citrus zest, or a spoonful of jam — anything from your pantry can transform these muffins. They also make an excellent base for frostings: add a silky buttercream or a citrus glaze and watch them become showstoppers.
These muffins are anything but dull. The combination of baking powder and sparkling water produces an unusually airy, fluffy texture: the batter puffs up and the crumb stays light. I tested this version using Natvia for Baking to see how an erythritol-based sweetener performs in baked goods. The muffins rose nicely, had a pleasant mild sweetness, and showed no noticeable aftertaste in my tests. Taste perception varies, so if you’re sensitive to erythritol-type sweeteners, you may notice a subtle difference.
Tips for best results
Use sturdy paper liners so the muffins release easily. When mixing, whisk the wet ingredients well before adding the dry mix. I usually add the coconut flour mixture all at once and whisk until smooth, but sifting the flour into the wet mixture while whisking will help prevent lumps and ensure an even batter. After a couple of minutes the batter will thicken — that’s normal with coconut flour.
If you find that erythritol contributes to a firmer outer crust (which can happen with some erythritol-based sweeteners), try reducing the granulated erythritol slightly and adding a small amount of liquid stevia or a powdered stevia blend to keep the crumb and exterior softer. Using a blend of sweeteners often gives the most pleasing texture.
How to make the muffins
Preheat the oven to 350 °F (175 °C). This recipe yields six medium muffins. Line a six-cup muffin pan with good-quality, sturdy paper liners.
In a small bowl, combine the coconut flour and baking powder and mix well. In a larger bowl, whisk together the eggs, sparkling water, and sweetener until evenly combined. Add the dry mixture to the wet ingredients and whisk until the batter is smooth. The batter will thicken after a few minutes.
Scoop the batter into the prepared liners and bake for about 20 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool slightly before removing them from the liners. Serve warm or at room temperature.

Lemon Muffin Variation (Dairy-Free)
If you love citrus, try the lemon variation: add the zest and juice of a small organic lemon for a bright, tangy flavor. For lemon poppy seed muffins, stir in one tablespoon of poppy seeds. The procedure is the same as the basic recipe, with the zest and juice added to the wet ingredients before combining with the dry mix.

I also used the lemon batter to bake whoopie pies, filling them with a butter-based orange frosting for a rich contrast between tart cake and sweet filling. If you make them in a whoopie pan, bake times can be shorter — about 10–15 minutes — so watch closely. The lemon version and the whoopie pies are wonderfully bright and satisfying.
