Pork ribs are one of my favourite meals—there’s something irresistible about a rack of tender, saucy back ribs. Whenever I spot a sale, I buy several racks and stash them in the freezer so I’m always ready to cook, whether I’m firing up the smoker or hosting friends for dinner.
Ribs should be saucy, sticky and fall-off-the-bone tender. While smoking is my usual method, ovens and slow cookers are fantastic alternatives when the weather isn’t cooperating or when I want a slightly different flavour profile. This recipe is an easy oven-braised version that produces wonderfully sweet, tangy ribs with a caramelized bourbon glaze and meat that pulls cleanly from the bone.

The combination of a brown sugar-based rub and a bourbon-infused sauce gives these ribs a rich, layered flavour: sweet notes from brown sugar, a hint of warmth from cinnamon and cumin, and a sharp, tangy balance from vinegar and mustard. Cooking slowly in a covered dish lets the meat braise gently in the sauce, ensuring tenderness, and finishing uncovered concentrates and caramelizes the glaze for that signature sticky finish.

Sticky Ribs with Bourbon

Ingredients
- 2 racks pork back ribs
Rub
- 1/2 cup brown sugar
- 1 tbsp paprika
- 1 tbsp cumin
- 1 tbsp salt
- 1 tbsp oregano
- 1 tbsp garlic powder
- 2 tsp cayenne pepper (adjust to taste)
- 3 tbsp dried onion flakes
Sauce
- 1 cup vinegar
- 1 1/2 cups brown sugar
- 1/2 cup bourbon
- 1 cup crushed tomatoes
- 1 tsp paprika
- 1 tsp cinnamon
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp salt
- 1 tsp cayenne pepper
- 2 tbsp Dijon mustard
Instructions
- Combine all rub ingredients in a bowl and mix thoroughly until evenly blended.
- Remove the thin membrane from the back of each rack of ribs. Cut each rack into sections of 3–4 bones for easier handling. Generously coat the ribs with the rub, massaging it into the meat. Refrigerate for 1–2 hours to let the flavors penetrate.
- Stir together the sauce ingredients until the mixture is smooth and uniform; this will be your sticky glaze.
- Arrange the ribs in a baking dish and pour the sauce over them, turning each piece so it is well coated. Cover the dish tightly with foil or a lid.
- Bake in a preheated 350°F (175°C) oven for 2 to 2 1/2 hours. Flip the ribs after the first hour to promote even cooking and glaze distribution.
- Remove the cover for the final 30 minutes to allow the sauce to reduce and become sticky. Watch closely to avoid burning; if the glaze begins to darken too quickly, lower the oven temperature slightly.

Serving tip: let the ribs rest for a few minutes after removing them from the oven so the glaze firms slightly. Serve with a simple coleslaw, roasted vegetables or grilled corn to balance the richness. Leftovers keep well and can be reheated gently; the flavours often deepen after sitting overnight.
Variations: cook these ribs in a slow cooker on low for 6–8 hours if you prefer an even gentler braise. For a smokier profile, add a small amount of smoked paprika to the rub and finish under a hot broiler or on a grill for a minute or two to develop a light char.
