Creamy Pistachio Cheesecake Recipe

I transformed my favorite cheesecake into a smooth, creamy, dense, and rich pistachio cheesecake. The recipe scales easily for different pan sizes.

Ingredients & substitutions

  • Cream cheese: use full-fat brick-style cream cheese. Brands vary, but full-fat yields the best texture.
  • Sugar: granulated sugar is used here; light or dark brown sugar also works but will slightly change the color and flavor.
  • Sour cream: sour cream or Greek yogurt can be used interchangeably in equal amounts; plain unsweetened yogurt will also work.
  • Eggs: use large eggs at room temperature. If needed, warm them in hot water for 5–10 minutes to temper quickly.
  • Vanilla: vanilla bean paste or vanilla beans give the best flavor; pure vanilla extract is an acceptable substitute.
  • Pistachios: I used lightly salted pistachios, ground finely and pulsed with water into a paste. Pistachios have a subtle flavor—if you want to boost it, add ½–1 tsp pistachio extract.
  • Store-bought pistachio paste: I haven’t fully tested it, but it should work. If it’s runnier than homemade paste, reduce the sour cream or add 2 tsp cornstarch with the sugar to thicken.
  • Crust: honey graham crackers, browned butter, and a pinch of cinnamon make a deeply flavored crust.

Step-by-step instructions

Step 1: Prepare the pan. Remove the springform’s outer ring, line the bottom with a sheet of parchment that overhangs the edge, then reattach the side so the parchment is secured. Lightly spray the sides with baking spray.

Step 2: Make the crust. Brown the butter in a small pot until the milk solids turn golden and the butter smells nutty. Let it cool slightly. Pulse graham crackers in a food processor until fine crumbs, then add the browned butter, sugar, and a tiny pinch of cinnamon. Pulse until evenly distributed. Press the crumbs into the prepared pan, pressing the bottom smooth and bringing the edges up about halfway. Use a ½ cup measuring cup to compact the crust and create clean edges. Bake the crust 5–10 minutes while you prepare the filling.

Step 3: Make the pistachio paste. Pulse pistachios in a food processor until as finely ground as possible, then add a little water (a teaspoon at a time) and pulse until the mixture clumps into a paste.

Step 4: Make the filling. With all dairy at room temperature, beat the cream cheese with the sugar and pistachio paste until smooth, creamy, and glossy—no lumps. Add the sour cream, vanilla, and salt and mix on low until combined. Finally add the egg and mix until just incorporated. Scrape the bowl and give a final gentle mix, keeping the speed low to avoid incorporating air.

Step 5: Bake. Pour the filling over the crust. Place the cheesecake on the middle oven rack and set another pan filled with hot water next to it (this provides gentle humidity and helps prevent rapid edges from forming). Bake at 300°F (148°C) for about 35 minutes for a 6-inch pan—the edges should be set while the center is still slightly jiggly.

Turn the oven off and leave the door cracked open for 10 minutes, then open the door fully for another 10 minutes to allow the cheesecake to cool slowly. This gradual cooling helps prevent cracks.

Step 6: Chill and serve. The center should still have a gentle wiggle when you remove it. Let the cheesecake cool to room temperature for a couple of hours, then refrigerate for at least 6 hours or overnight to firm up completely before slicing.

Expert tips to get the perfect bake and prevent cracking

  • Weigh ingredients when possible for accuracy. A digital scale improves consistency.
  • Bake low and slow. A lower temperature and longer bake promote an even rise and a flat, smooth top. If the oven runs hot, the outer edge can set too fast while the center remains underdone, causing uneven rise.
  • Cool slowly in the oven with the door cracked, then fully open, before removing—this reduces the chance of cracks.
  • Chill for at least 6 hours, preferably overnight, so the cheesecake sets fully and slices cleanly.

How to bake this cheesecake in different pan sizes

This recipe is adapted from my original cheesecake formula and scales predictably. The amounts below refer to how many times to multiply the base (6-inch) batch to fit other pan sizes. Adjust baking time accordingly—the larger the pan, the longer the bake and rest time.

  • 10-inch pan: 4× filling, 2× crust — bake 65–75 minutes; rest in oven 25 minutes.
  • 9-inch pan: 3× filling, 1.5× crust (or 4× filling for a taller cheesecake) — bake 55–60 minutes; rest in oven 20 minutes.
  • 8-inch pan: 2× filling, 1× crust (3× filling if you prefer taller) — bake 45–50 minutes; rest in oven 15 minutes.
  • 6-inch pan: base recipe — bake about 35 minutes; rest in oven 15 minutes.

How to store this cheesecake

To refrigerate: Cover the cheesecake with foil or plastic wrap and store it in the fridge for up to one week. Serve cold, or let sit at room temperature 1–2 hours before serving for a softer texture.

To freeze whole: Wrap tightly in plastic wrap and then in aluminum foil, or place in a suitably sized airtight container. Thaw in the refrigerator overnight.

To freeze slices: Place slices in an airtight container or wrap individually, then seal in a freezer bag with as much air removed as possible. Thaw at room temperature for a few hours before serving.

Ingredients

Graham Cracker Crust

  • 85 grams salted butter, browned (results in ~56g after browning)*
  • 125 grams graham crackers
  • 25 grams granulated sugar
  • Tiny pinch of cinnamon (optional)

Pistachio Paste

  • 56 grams lightly salted pistachios, shelled
  • 45–75 mL water (add 1 tsp at a time to achieve paste)

Cheesecake Filling

  • 227 grams cream cheese, room temperature
  • 67 grams granulated sugar
  • 60 grams pistachio paste
  • 56 grams sour cream, room temperature
  • 1 tsp vanilla bean paste or pure vanilla extract
  • 1/4 tsp fine sea salt
  • 1 large egg, room temperature

Method

Brown Butter Graham Cracker Crust

  1. In a small pot over medium heat, cook the butter 5–10 minutes until it bubbles, foams, and the milk solids brown. Pour into a bowl and cool slightly.
  2. Preheat oven to 300°F (148°C) conventional. Grease and line a 6-inch springform pan with parchment.
  3. Pulse graham crackers in a food processor until finely ground. Add sugar, cinnamon, and browned butter (about 56g after browning) and pulse until evenly combined.
  4. Press the crumbs into the prepared pan, coming up halfway on the sides. Bake crust 5–10 minutes while preparing the filling.

Pistachio Paste

  1. Pulse pistachios in a food processor until very fine.
  2. Add about 3 tsp of water and blend; add more 1 tsp at a time until the nuts form a cohesive paste.

Pistachio Cheesecake Filling

  1. Ensure cream cheese, sour cream, and egg are at room temperature. Warm briefly in hot water if necessary.
  2. Beat cream cheese with pistachio paste and sugar on low speed until smooth and lump-free, scraping the bowl as needed.
  3. Add sour cream, vanilla, and salt; mix on low until combined. Add the egg and mix just until combined.
  4. Scrape the bowl and mix once more gently. Fold the batter a few times and pour over the crust.
  5. Place the cheesecake on the middle oven rack with another pan of hot water beside it. Bake for about 35 minutes for a 6-inch pan; edges should be set and center slightly jiggly.
  6. Turn the oven off and leave the door cracked for 10 minutes, then open fully for another 10 minutes to cool gradually.
  7. Remove and cool to room temperature, then refrigerate at least 6 hours or overnight before serving.

Notes

*If you skip browning the butter, use 56 grams melted butter to mix with the graham crackers.

  • Double the recipe for an 8-inch pan.
  • Triple the recipe for a 9-inch pan.
  • Quadruple the recipe for a 10-inch pan.

Peeling the pistachio skins (for a brighter green color) requires blanching in boiling water for 2 minutes, cooling, and rubbing off the skins. This is optional but yields a less brown tint; a drop of green food coloring can also intensify color.
