It’s warm, savory, and bright with fresh ginger and garlic, with a gentle heat from sriracha and optional chili flakes. I use three sources of spice—ginger, sriracha and chilis—but the result is balanced, not overpowering. You can easily dial the heat up or down to suit your taste.

To get the classic texture of good fried rice, cook over medium-high or high heat and have all ingredients prepped and ready. Fried rice cooks quickly; if you stop to chop or measure while the pan is hot, vegetables can overcook or burn and the final dish won’t be as fresh-tasting.

One of the most important tricks: use cold or chilled rice. Fresh, hot rice tends to clump and become mushy when fried. Leftover refrigerated rice fries up dryer and browns better, giving you the desirable slightly crisp grains. How To Make Spicy Chicken Fried Rice

  1. Sauté the vegetables: Melt 1 tablespoon of butter in a large skillet or wok over medium-high heat. Add diced carrots, chopped white onion, frozen peas, minced garlic, and grated fresh ginger. Season lightly with salt and pepper and sauté for 3–4 minutes until the vegetables are tender but still bright.
  1. Cook the eggs: Push the vegetables to one side of the pan or transfer them briefly to a bowl. Add another tablespoon of butter to the empty side, let it melt, then add the beaten eggs. Scramble until just set and fluffy, then fold them into the vegetables.
