This is one of those breakfasts I’m genuinely proud of. The combination of textures and flavours — crisp, buttery crumpets, creamy avocado, runny egg yolk and smoky bacon — is especially comforting when you’re a little sleep-deprived. It’s simple to make, yet feels delightfully indulgent.
Picture it: a sourdough crumpet, toasted until golden and almost crunchy, spread with a little salted butter and topped with mashed avocado. The butter keeps the crumpet savoury while the avocado adds a bright, silky note. A tip: serve on a wooden board rather than a ceramic plate to avoid condensation that can make the bottom crumpet soggy.
For the avocado, mash half a ripe fruit with about one teaspoon of lemon juice. The lemon stops the avocado browning and adds a fresh, citrusy lift. Next, add one or two eggs — fried or poached to your preference. For a neat presentation, poach eggs gently in simmering water using rings if you like perfect shapes, but frying works just as well and takes less fuss.
Top the eggs with two rashers of smoked streaky bacon, cooked until crisp. Finish the stack with a second toasted crumpet as the lid; spreading a little more salted butter on the top crumpet adds extra decadence. This is a dish best eaten with a knife and fork unless you don’t mind wearing your breakfast.

A quick note about the crumpets used here: I’m using Luxury Sourdough Crumpets from Iceland’s new bakery range. They’re dairy-free and include oat grains, sunflower and flax seeds for extra flavour and texture — a great choice if you want something with more bite than a standard crumpet. I’ve been impressed enough to plan trying more from the range.

Ingredients
- 2 crumpets
- 1/2 ripe avocado
- 1 teaspoon lemon juice
- 2 rashers smoked streaky bacon
- 1 or 2 eggs
- a little butter (preferably salted)
Instructions
- Toast the crumpets on a high setting until golden and crisp. Repeat if you prefer them extra crunchy.
- Mash the avocado with the lemon juice and spread it over the buttered bottom crumpet.
- Poach or fry the eggs and place them on top of the avocado.
- Arrange the crispy bacon over the eggs and finish with the second crumpet. Melt a little butter into the top crumpet for added richness.
