Vegan white sauce lasagna layers sautéed onions, mushrooms, and spinach in a silky vegan white sauce and finishes with a sprinkle of vegan parmesan. This version swaps traditional butter and flour béchamel for a creamy, plant-based cashew cream, making it comforting, flavorful, and entirely vegan.

For me, comfort food often means layers of tender pasta and vegetables bathed in a rich, creamy sauce. While red-sauce lasagna is a classic, this vegan white sauce lasagna offers a lighter, yet indulgent alternative. It combines savory mushrooms, sweet caramelized onions, and bright spinach with a luscious cashew-based sauce that browns slightly at the edges when baked. It’s a crowd-pleaser that works well for weeknight dinners and special occasions alike.
What is Bechamel Sauce?
Béchamel is the classic white sauce traditionally made from butter, flour, and milk. In this recipe, we recreate that creamy mouthfeel using plant-based ingredients: a sautéed onion and wine base combined with blended cashews (or suitable substitutes) and vegetable broth. The result is a smooth, savory white sauce—without dairy or gluten—perfect for layering in lasagna.
I developed this lighter, vegan version after trying a restaurant rendition and adapting it so it’s gluten-free and dairy-free. The family loved it so much I had to make it again soon after. It’s a versatile, comforting dish that showcases simple vegetables inside a rich, dairy-free sauce.
White Lasagna Ingredients

- Garlic: Use fresh cloves for the brightest, most aromatic flavor.
- Mushrooms: Crimini mushrooms work well, but button or shiitake are fine too.
- White onion: When cooked, white onion softens and sweetens, forming a great base.
- Spinach: Fresh spinach wilts quickly into the warm vegetables; organic is recommended.
- Fresh basil: Adds a fragrant, herby lift to the vegetable layer.
Start by preparing the filling. Sautéed mushrooms and onions form a savory base; garlic and basil add depth. Add the spinach last so it wilts quickly and retains color. Set the mixture aside to cool while you make the white sauce.

Vegan Bechamel Sauce Ingredients

- White onion and shallot: Sautéed to create a flavorful base for the sauce.
- Garlic: Fresh cloves for best flavor.
- Dry white wine: Adds acidity and depth; cook briefly to reduce the alcohol.
- Raw cashews: Blended with broth to make a silky cream. (See substitutions below for nut-free options.)
- Vegetable broth: Used to thin and flavor the sauce; divided amounts are noted in the recipe.
- Dijon mustard: Contributes a gentle tang and helps emulsify the sauce.
- Nutritional yeast: Adds a savory, cheese-like note and helps thicken the sauce.
- Garlic powder and onion powder: For rounded, consistent seasoning.
Sauté the shallot and onion, add wine and reduce, then blend cashews with broth, nutritional yeast, mustard, and seasonings in a high-speed blender. Return the reduced onion-wine mixture to the pan and whisk in the blended cashew cream. Heat gently until the sauce thickens, then remove from the heat and let it rest while you assemble the lasagna.
Vegan Bechamel Sauce Ingredient Substitutions
- Use yellow onions or leeks in place of white onion.
- Substitute shallots with finely chopped red onion if needed.
- Replace white wine with a splash of lemon juice or additional vegetable broth if you prefer no alcohol.
- For a nut-free white sauce, use silken tofu, cooked white beans, or a flour-based roux with plant milk or extra vegetable broth.
- Stone-ground mustard works in place of Dijon; miso, tamari, or soy sauce can replace nutritional yeast for savory depth.
- One medium garlic clove ≈ 1/4 teaspoon garlic powder; about 1 tablespoon fresh onion ≈ 1 tablespoon onion powder.

When the blended cashew mixture is added to the warmed onion and wine reduction and whisked over medium heat, it thickens into a creamy sauce perfect for layering.

- Place 1/2 cup of vegetable broth in the bottom of a 9 x 13-inch pan to keep noodles from sticking and to help them finish cooking.
- Arrange a first layer of lasagna noodles, overlapping slightly to cover the base.
- Spoon a thin layer of the white sauce over the noodles, then add a layer of the mushroom-spinach mixture.
- Repeat layers—noodles, sauce, vegetables—until the pan is filled, finishing with sauce on top.

- Finish with a sprinkle of vegan parmesan across the top for a bit of crunch and savory flavor.

Prepare Immediately or Make Ahead
- Bake covered at 350°F for 25 minutes, then uncover and bake an additional 10 minutes until the top is lightly golden.
- You can assemble, cover, and refrigerate the lasagna until you’re ready to bake—perfect for meal planning.
- To develop deeper flavor, bake ahead of time, cool completely, refrigerate overnight, and reheat before serving.

I served this lasagna with a large green salad and a tangy Italian-style dressing for contrast. It pairs nicely with crisp greens, roasted vegetables, or simply a light bowl of soup.

Recipe FAQs
Aim for three to four layers of noodles and filling. Three layers gives a classic balance of sauce, filling, and pasta without becoming too tall.
Soupy lasagna can result from under-drained noodles, too much sauce, or not allowing the dish to rest after baking. Use pre-baked noodles or slightly undercook standard noodles, and make sure each layer isn’t overly saturated.
Try uncooked rice paper sheets, flatbreads, or thin slices of zucchini, eggplant, sweet potato, or pumpkin for a low-carb option. Lightly sauté vegetable slices for a few seconds to soften before layering.
Tips
- Store leftovers covered in the refrigerator for up to 3 days.
- To reheat, bake covered at 350°F (175°C) for about 30 minutes until heated through.
- To freeze, bake fully, cool, cut into portions, then wrap and freeze. Thaw completely before reheating.
- For a nut-free version, use blended white beans or silken tofu in place of cashews.
Next time you want comforting Italian flavors with a plant-based twist, try this vegan white sauce lasagna. It’s rich, satisfying, and a welcome change from the usual tomato-based lasagna.

Ingredients
Lasagna
- 1 package pre-baked vegan lasagna noodles (or cooked lasagna noodles)
- 1 white onion, diced
- 2 cloves garlic, minced
- 16 ounces mushrooms, sliced thin
- 10 ounces fresh organic spinach
- ½ cup fresh basil, roughly chopped
Cashew Cream
- 1 shallot, minced
- 1 white onion, minced
- 4 cloves garlic, minced
- ½ cup dry white wine
- 3 cups vegetable broth, divided
- ½ cup raw cashews (or substitute white beans, silken tofu, or flour for a nut-free version)
- ¼ cup nutritional yeast
- 2 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Instructions
Lasagna
- Cook lasagna noodles according to package directions, or use pre-baked noodles.
- In a large skillet, sauté 1 diced white onion and 2 cloves minced garlic until translucent.
- Add sliced mushrooms and cook until browned. If they begin to stick, add a splash of vegetable broth and cook until liquid evaporates.
- Stir in the chopped basil, then add the fresh spinach a large handful at a time, stirring to wilt. Add ½ cup vegetable broth if needed to wilt the remaining spinach.
- Remove the mixture from the heat and set aside to cool slightly.
White Sauce
- Sauté minced shallot, minced white onion, and 4 cloves minced garlic in a skillet until softened.
- Add ½ cup dry white wine and cook until the wine has mostly reduced, about 5 minutes.
- Add ½ cup vegetable broth and reduce heat to a gentle simmer.
- Meanwhile, combine ½ cup raw cashews (or preferred substitute), 1½ cups vegetable broth, ¼ cup nutritional yeast, 2 tbsp Dijon mustard, 1 tsp garlic powder, and 1 tsp onion powder in a high-speed blender and blend until completely smooth.
- Raise the heat to medium under the onion mixture. Slowly whisk in the blended cashew cream until fully incorporated and heated through; the sauce will thicken as it warms. Remove from heat and set aside.
Layering the Lasagna
- Preheat the oven to 350°F (175°C).
- Pour ½ cup vegetable broth into the bottom of a 9 x 13-inch casserole dish.
- Arrange a layer of noodles to cover the base. Spoon a thin layer of white sauce over the noodles, then add a layer of the mushroom and spinach mixture.
- Repeat with another layer of noodles, sauce, and vegetables until the dish is filled. Finish with a final layer of sauce on top.
- Optionally, sprinkle the top with vegan parmesan.
Baking / Make-Ahead / Freezing
- Cover and bake for 25 minutes. Remove the cover and bake an additional 10 minutes until the top is lightly golden.
- To make ahead, assemble and refrigerate covered until ready to bake. Baking ahead and refrigerating overnight can deepen the flavors.
- To freeze, bake fully, cool, cut into portions, wrap individually, and freeze. Thaw completely before reheating.
Notes
- Store covered in the refrigerator for up to 3 days.
- Reheat in a 350°F oven for about 30 minutes until warmed through.
- When freezing portions, thaw completely before reheating for best texture.
