I’m not usually one for specialty kitchen gadgets, but I have to admit I am obsessed with my Air Fryer. The name can be misleading—there’s no deep frying involved—just hot air circulating quickly to produce crisp, crunchy results. That makes it perfect for an irresistibly crispy, gooey grilled cheese. Once you try this method, you may never make a grilled cheese any other way.

How to make a grilled cheese sandwich in the Air Fryer?

To get the best results when making a grilled cheese in an Air Fryer, follow a couple of simple rules:

  • Brush or spread a thin layer of a crisping agent (fat) on the outside of the bread. Mayonnaise is my favorite choice because it browns and crisps beautifully—you won’t taste any mayo once it’s cooked.
  • Because an air fryer circulates air strongly, secure the sandwich so it doesn’t move. I use two toothpicks inserted through the sandwich, one on each side, but an air-fryer-safe trivet or small weight works as well.

With those tips in mind, choose your cheese (or combination of cheeses) and cook the sandwich at 380°F for about 8–10 minutes total, flipping once halfway through.

  • Mozzarella – Mild flavor and very stringy, ideal for dramatic cheese pulls.

Ingredients

  • 2 slices Italian bread (or your favorite bread)
  • 1 slice cheddar cheese
  • 1 slice mozzarella cheese
  • 1 tablespoon mayonnaise

Equipment

  • Toothpicks (or an air-fryer-safe trivet to hold the sandwich)

Instructions

  1. Spread the mayonnaise on one side of each slice of bread. Layer the cheeses on the side that does NOT have mayonnaise, then top with the other slice so the mayonnaise is on the outside.
  2. Place the sandwich in the air fryer and secure it by inserting two toothpicks, one on each side, or place an air-fryer-safe trivet on top if available.
  3. Set the air fryer to 380°F. Cook for 4 minutes, then check the top. If it has started to brown, remove the toothpicks carefully, flip the sandwich, and cook another 4 minutes. If it hasn’t browned, cook 1 more minute before flipping and finishing with 5 additional minutes.

Notes

This recipe was tested in basket-style air fryers (a 3L Power XL and a 1.7L Dash). Avoid letting the cheese hang off the sides of the bread before cooking; it can melt and move around in the air fryer.
