This salad comes together quickly and benefits from a honey-mustard or balsamic-style dressing. A White Balsamic Honey Mustard Vinaigrette brings bright acidity, gentle sweetness and a silky finish that complements the salty and creamy elements. - Quarter the Little Gem lettuce heads and rinse gently. Place cut side down on clean kitchen towels to drain and dry.
- Prepare the White Balsamic Honey Mustard Vinaigrette: combine minced shallot and white balsamic vinegar to macerate briefly, then add oil, Dijon, honey, and season to taste. Shake or whisk until emulsified.
- Cook bacon according to package directions, aiming for extra crispness so it adds texture as a topping. Cool and crumble.
- If your Gorgonzola is a block, crumble it into small pieces; otherwise use pre-crumbled Gorgonzola.
- Toast walnut pieces in a small skillet over medium heat for about 4–6 minutes, stirring frequently, until they give off a warm, toasty aroma. Transfer to a plate to cool.
- Pat the Little Gem wedges dry and arrange them on a serving platter.

Dressing
- 1 tbsp shallot, minced
- 2 tbsp white balsamic vinegar
- 6 tbsp neutral oil (grapeseed, avocado or light olive oil)
- 1 tbsp Dijon mustard
- 2 tsp honey (raw or regular)
- Salt and pepper, to taste
Salad
- 2 whole Little Gem lettuces (or half large head butter lettuce / baby lettuces)
- 2 cups Forelle pears, cored and quartered (about 2–3), or sliced Bosc / red pears
- 2 slices bacon, cooked extra crispy and crumbled
- 1/4 cup Gorgonzola, crumbled
- 1/4 cup walnut pieces, toasted
Instructions
Dressing
- Combine minced shallot and white balsamic vinegar in a jar and let sit 5 minutes to macerate.
- Add oil, Dijon mustard, honey, salt and pepper, then shake or whisk until emulsified.
- Store any leftover dressing in the refrigerator up to one week.
Prepping and assembling the salad
- Quarter and rinse the Little Gem lettuces, then drain and pat dry.
- Cook and crumble bacon. Crumble or break the Gorgonzola into bite-sized pieces.
- Toast walnuts in a dry skillet over medium heat for 4–6 minutes until fragrant; cool.
- Arrange the lettuce wedges on a platter and layer pear slices on top.
- Scatter crumbled Gorgonzola, toasted walnuts and bacon over the salad.
- Drizzle with the White Balsamic Honey Mustard Vinaigrette just before serving.
Notes
