  • 1 butternut squash, peeled and cubed

  • ½ red onion, finely diced (optional)
  • 1 Cup cooked quinoa
  • Cup crumbled goat cheese
  • ¼ Cup pumpkin seeds, toasted
  • 5 Oz pancetta, cooked until crisp
  • 1 Tablespoon fresh sage, thinly chopped

For dressing:

  • ¼ Cup apple cider vinegar
