8 tomatoes, quartered

1/2 Spanish onion, roughly chopped

1 slice of bread (stale or toasted works well)

1 glass water (about 200 ml)

METHOD:

Add the ground cumin, sherry vinegar, the slice of bread, the olive oil and about 200 ml (1 glass) of water. Add a pinch of salt.

3. Puree until smooth: Blend the mixture until completely smooth. If you prefer a thinner consistency, add a little more water. Taste and adjust the seasoning with additional salt or vinegar to balance acidity and saltiness.

4. Strain (optional): For an extra-silky texture, pass the blended soup through a fine sieve or chinois. This step removes any remaining skins or seeds and gives a velvety finish.

5. Chill and serve: Gazpacho is best served well chilled. Add a few ice cubes to the bowl or serve from the fridge. Spoon into bowls or glasses and garnish with the reserved chopped vegetables, crunchy croutons and a drizzle of good-quality olive oil.
